Egg in the Nest (Talk on Radio)

Hey guys

As I promised the recipe I chatted about on Radio Islam’s Weekly talk show. For those of you who missed it just to fill you in on what went down in the studio’s. We discussed breakfast as the most important meal of the day & all tasty treats in the morning.

Well I’m sure you’ve heard that phrase eat “Breakfast like a King, Lunch like a Prince and Dine like a Pauper” , but do we actually follow it?

The thing is due to our day’s agendas our morning time is rushed & some of us are even guilty of skipping breakfast. In actual fact we shouldn’t skip breakfast, even if its breakfast on the go or at work. Breakfast provides the body and brain with fuel after an overnights fast! It’s almost like iftaar & without breakfast you are basically driving a car with no petrol! That’s actually where the name originates from break-fast.

We spoke about two recipes. “The DAYCA” was the first recipe, a bit of sweet & a bit of savoury item “The Egg in the nest”.

Our focus on having all the elements of the food pyramid to balance out a meal is some times a worry, but this next dish is entirely all your wishes come true. A reminiscing dish from my childhood, a trip down memory lane, I call it “Egg in a nest” ,because it looks exactly like an egg in the nest!

What I really like about it, it’s a one dish meal and that makes things so much easier & quick to indulge in the morning for the whole family. In a single muffin cup you have a brown and crispy hash brown crust that is filled with sautéed vegetables & a bit juicy meat topped melted cheese, and a perfectly cooked sunny side up egg.

It’s really awesome & has all the elements that your body needs to kick start the day…You can also serve it as a brunch dish, enjoyed with a tossed green salad but for breakfast with a bread toast on the side. You good to go for the day.

 

Egg in the nest

Prep time: 30mins

Serves 6

NB: I doubled it, it can be altered halved or doubled, use it as a guideline, but you can definitely use it as a guideline.

 

Ingredients:

450gr grated potatoes

6 eggs

2 egg whites

2Tablespoon melted butter

2 Tablespoons olive oil

1/2 cup onions/red onions/spring onions/chives

1/4 cup capsicums red/yellow pepper

1 cup meat in cubes either sausages/polony

1 cup baby spinach u can also use mushrooms/zucchini

salt

pepper

paprika/cayenne pepper

spices

 

Method:

  1. Preheat your oven to 230 degrees C.
  2. Use a non-stick jumbo muffin pan of 6 cups.  Or ramekins if u have, butter the inside it makes the hash brown crispy & browns.
  3. Season the grated potatoes with salt and pepper, paprika or chilli flakes for heat.
  4. In another bowl lightly whisk 2 egg whites. Add the egg whites to the hash browns, along with melted butter, and toss them all together to combine.
  5. Than evenly divide the mixture among the muffin cups measure ½ cup mixture and firmly press onto the bottom and up the sides of each cup. Bake in your oven for about 15 minutes, or until nicely browned.
  6. Meanwhile prepare your veggies In a medium sized pan add olive oil. Sauté half cup onions and quarter cup capsicums, on medium high heat, sauté until softened. Season with salt and pepper or spices to your liking.
  7. Add 1 cup meat in cubes either sausages/polony and cook.
  8. Then add 1 cup veggies until the spinach has wiltered.
  9. Evenly divide the mixture among the baked hash brown cups press down with the back of the spoon.
  10. To top that, sprinkle a couple of tablespoons of grated cheese just to cover the veggies & Place back into the oven for about 2-3 minutes or just so the cheese melts.
  11. After that cheese has melted remove it from the oven & crack one egg into each cup.& back in the oven for the last time, Bake until the whites are set and if u prefer runny yolks (about 8-10 minutes) if u want it well done bake for about 12 min depending on your oven. Remove from oven. Let them cool for a few minutes, remove each egg in the nest from the muffin pan & Serve right away

I like to add a little extra crunch for the side, 2 slices rye bread toasted topped with ½ medium tomato sliced up, 20gr feta cheese & basil leaves on top.

And that goes down as your morning most important meal of the day, but not to forget the most important drink of the day & that is water!

Our body needs about 4 glasses of water just to start the day. We also chatted about how lazy water drinkers can make use of this blessing from our Creator & if u all about taste than infuse water, with so much endless options of flavours: spices, herbs & fruits. Which I will definitely show in another post.
