Sally Williams Ice Cream Store

ONE WORD…………NOUGAT!!!

The Sally Williams Nougat Store in Sandton City has finally opened! I had my eyes on it for quite sometime. YAY! It took long enough. Situated next to the forever 21 clothing store, at the Mandela Square.

We asked the staff if any of the ingredients contained any traces of gelatine or wine, they replied in the negative. So we indulged!

Open 7 days a week from 9 AM to 5 PM

Take it in a cone or cup, you will be craving for more, 1 scoop is R25, but oooof I could eat the whole store!

Flavours from coffee & chocolate, to cranberry & almonds, to honey & macadamia (my favourite) & plenty more…They all are simply divine & a luxury ice cream indeed!

Fashionable Hong Kong

Hi guys

Just a little review on Hong Kong. Throw back to: The 12th of February & it was damn cold! We literally wore layers of our summer clothes underneath our jackets we fortunately carried with from home.

With so much to do, in so little time only 3 Days in Hong Kong we were cut short. Lucky for us we were pretty much clued up, from all the stories of my parent’s trip to HK a month ago.

View of Hong Kong from Victoria Peak

Hilton Garden Inn Mongkok

A 5 star hotel for HK when it comes to the interior. The room space was tiny, but than again most hotel rooms in HK are really compact. Honestly, coming from those spacious suites in Bali, we felt spoilt! Facilities pretty basic. The gym just had 3 treadmills & weights…but who wants to run, when you have a whole city to run around in. The Breakfast lounge has a standard buffet. Staff were quick to help at any request. The pool is soon to be opened on the rooftop

While we might have missed the “Suite life” , it  was a blessing in disguise, which kept us out of the hotel & running through the city streets like backpackers. If you more of the adventure junkies like us, the best way to see the city is on foot, so firstly get yourself the city map or use offline GPS on your phone & it’s going to an awesome time.

We planned our days according to our personal choice & interest of where to go & what to do. Below is what I recommend to do, for those travelling for the first time to Hong Kong.

Transport:

Uber is cheap compared to the local taxi from & to the airport. In the city we took the metro to every major stop & from there walked our way through. We nailed the steps those days.

Things to do in HK:

  • Tsim Sha Tsui Promenade on Nathan Road (we still trying to pronounce Tsim Sha Tsui correctly)

  • Star Ferry The ultimate experience to discover the beauty of Hong Kong. From Tsim Sha Tsui train station we took a walk to the Victoria Harbour & boarded the Star Ferry across to Central district of Hong Kong. From there one can take a tram or the double decker bus to Victoria Peak, we opted for taking the bus up with the view of the sunset on the city & return with the tram, experiencing both.

  • Victoria Peak One of those “must see” places! During day sure not so crowded but after sunset it does get as it’s the best time to see the sunset on the one side of the mountain & on the other the skyline with all the lights. Feels like you in a movie scene, the stunning colours on
    the buildings really is amazing.

  • Hong Kong skyline stunning during the day as well as night when lit up. The evening light show to music was spectacular, the views from Kowloon & from Hong Kong Island are both spectacular.

  • Disney Land Stepping into the world of Disney is always an exciting one. The Disneyland at Hong Kong is no different and in fact you tend to spend less time queuing here than the other Disney parks around the world. Yes it’s not the biggest of the Disney parks, but it’s great for a day visit. The Toy Story land is fantastic, great design and you feel like a big kid. Make sure you stay for the ‘Paint the Night Parade’ which is simply Disney at its best.

Shopping:

  • Nathad Road: A lengthy road stretch out across Kowloon with all the brands at afforadable prices
  • Sneaker Street, Fa Yuen Street Mongkok (Kowloon)
  • Ladies Market,Tung Choi Street Mongkok (Kowloon)
  • Golden Computer Arcade
  • Wholesale Fruit Market, Canton Road Yau Ma Tei (Kowloon)
  • Fa Yuen Street (Sports Wear Street)
  • Harbour City
  • Times Square Shopping Centre, Causeway Bay
  • Fashion Walk

Food:

Halaal food was rare, but on Nathan Road there are a few Indian, Pakistani & Turkish restaurants just beware to stay away from those eating places that serve alcohol.

Over all, in my opinion about 3-4 days in Hong Kong is enough, unless shopping is your main objective than you will need a day or two extra.

The Suite life-Bali

Hi everyone

When we landed in Bali, I swear it was the quickest procedure from the plane, through the airport (customs check, baggage collection) & into our hotel transfer awaiting our arrival. Literally no longer than 30 minutes, the quickest airport experience I have ever had & before we knew it, we were in the hotel cab to the Hilton Garden Inn Bali Airport Hotel. We arrived at about 2 am so we booked a room at the airport hotel. My husband being a Hilton Honour’s Diamond Member, we got upgraded to the Suite which was perfect for us to just relax the night away before the games begin!

Hilton Garden Inn Bali Airport

Staff were friendly & helpful making it a really quick check in.

The Suite

The suite was modern & had this rustic style of wooden furniture throughout, I loved the rustic look. There was enough space to just dump our luggage for the night. With TV’s in both the lounge area & the bedroom, it was a night to just relax before our big plans began in Bali. The en-suite bathroom had a bathtub with a separate shower, plus another toilet by the dining room. Housekeeping was quick & also hilarious, when we requested “Milk”,  they speedily brought us…Mugs, haha, we all had a good laugh, but the service was good.

The Breakfast Lounge

The breakfast lounge has this stunning view overlooking the pool area. Although the breakfast foods were the basic norm (cereals, yoghurts, fruits, breads, pastries, juices, hot drinks & a live station for eggs). Decent for an airport hotel, we had a quick bite but we were more in a hurry to get in that Uber & rush off to Congrad Bali & finally start the second lag of our trip…Exotic Bali here we come!

The Conrad Bali Hotel

For me Conrad Bali was the highlight of all the hotels on our trip thus far. We were treated like Royalty by the staff. When checked in & got upgraded to the Premier Suite which was OMG so freaking ama-zing!!!

The Lobby

The Lobby theme wasn’t as expected of a Conrad Hotel, but as long as we had the 5 star Conrad stay that was what we wanted!

The Lagoon Suite

Meanwhile we were given the Lagoon Suite to use, while our Suite was being prepared for us. The lagoon suite was on the lagoon pools which flows throughout the hotel & links up to the major pools, fantastic for a private swim. It had this spacious feeling of a typical exotic holiday accommodation.

The Premier Suite

“P” for Premier & “P” for the Perfect Suite! It was an incredible stay!!! Situated in a more remote/quiet area than the lagoon suite. The room had this modish, neat & elegant style, reminded us of our stay during Hajj in Conrad Makkah, which was also sooooo smart!

dsc00590

dsc00572dsc00582

A classy, elegant & expensive taste in furnishing this suite. The kitchen area & the dining room had cupboards that were loaded with appliances such as a coffee machine, coffee grinder, juicer etc. The lounge had plasma TV no.1 on the wall with this massive space, we could literally have a party. The bedroom had two queen size beds with TV no.2 on the wall, a walk in dressing room with a dresser, leading to the bathroom. The bathroom had a couch in the centre , a his & hers basin, closed shower & closed toilet , a large bath tub & wait for it… TV no.3 .

dsc00577dsc00574

dsc00595

Housekeeping was so quick, almost as if they were waiting outside our door. Closer to the executive lounge than the lagoon suite & with a little patio deck leading out to the executive pool area.

Breakfast at Conrad had a variety of foods, infect they had a pretty good spread of everything & a few live stations chefs, which is awesome for us with a separate live egg station for vegetarians, just to make sure we were getting the freshest edibles, directly on our plates.

The Hotel Facilities

The Lagoon pools was right on the back doorstep of our first suite, Tennis courts, but the rackets were for hire. Spas, there is a Jiswa spa in the hotel, at a really nice price too. We took a walk across the road outside the hotel, home to a street packed with all these local Balinese Spa’s which were way cheap compared to the hotel. Beach time are a must! Waters are calm, but aqua socks are needed. What was freaking awesome was Jet skiing on the beach, at $15 for about 30 minutes. We bargained, as they triple up the prices for tourist. The traingular building is a wedding chapel for those romantic beach wedding…Makes me want to get married again, but to the same dude obviously 😉

dsc00511

dsc00510dsc00529

The Executive Lounge

A quiet retreat by the pool side & not to forget lots of treats! It was extraordinary to have access all day to free drinks & yummy snacks as you like. We really enjoyed the high tea spread of sandwiches, desserts, gourmet mocktails & milkshakes…Perfect on that hot summers beach day.

Hilton Bali

What a view!!! Hilton Bali was at the 2nd part of our trip & our home for the rest of the 5 days, which I must say, “Was the cherry on the top!” Hilton Honour’s desk clerks were kind enough to give us an even bigger upgrade from the Suite to the King One Bedroom Suite Ocean View.

dsc00730dsc00618

The Suite

Was given to us on our arrival to freshen up, while house keeping was making sure things were in order for our arrival in the King One Bedroom Suite. Honestly it was about 20 minutes later & the clerk called to inform us that our suite is ready & our luggage has been sent to our suite already.

The King 1 Bedroom Suite

A home by the beach! From the entrance hall to the balcony, the suite is one of great taste in deco . Expensive furniture & finishing throughout the suite, starting from the spare toilet ,to the kitchenette area, the lounge, the bedroom with a dressing closet en-suite to a huge bathroom with a separate shower & bath tub, I had the look on my face like Kevin from the Home Alone 2 movie. The glass center feature for the TV has a rotating wheel for enjoying from the couch or whilst in the bed.

My favorite memory is the balcony! As wide as the entire suite with sliding doors open the vision of the most fantastic views, beautiful sunrises & of course the magnificent ocean. Beware of the monkeys! bwahaha (evil laugh). Just kidding we were told of them but never had the pleasure of meeting a monkey.

The Executive Lounge-VIP Breakfast

Breakfast in Hilton Bali was a pleasant, comfortable & peaceful experience in the VIP lounge. Compared to the very busy & crowded breakfast lounge downstairs. We had the exact same variety of eats available to us at the buffet & upon request. We arrange with the staff to organized a strictly vegetarian pan (for Halaal purposes) to prepare our eggs etc. The staff & chef were so kind to arrange a non-meat station for us to watch them prepare our eggs.

Our breakfast lounge for 5 days

The Executive Lounge

The new executive lounge was under renovations, so sad! Especially after seeing those sunbeds by the very private pool. The executive lounge would have been great but the current lounge was awesome too, as it was situated right on the beach. With drinks & high tea on the beach it was convenient for those beach days, I think we made the most use to this lounge.

Hotel Facilities

The Mandara Spa treatments are amazing & it can all happen, in a villa on the beach.

The gym is great, because I loved the Jacuzzi, steam room & sauna. Every day we were there for rejuvenation & after it all, a quick dip of course, like a really quick dip in the freezing ice bath pool to cool off.

The pools are open all day & at nights too, for those private swims. The slide on the main pool is awesome & opens at 8:30 am. The kiddie’s pools had a beach theme with sand instead of steps, cool right! Plus a volley ball net… A few outdoor Jacuzzi’s & lagoon pools throughout the resort.

The beach when the current was normal, it was such a blast to be catching & riding the waves. Surfers Paradise, all day long.

Yay! Finally done… A long post indeed! Memories to cherish forever!

Beautiful Bali

Hi awesome people out there

Just a little scoop on what went down, in Bali this holiday…With only 6 days in Bali we tried to do as much as we could to enjoy the island. As well as ultimately just chill in swimwear all day, take romantic walks on the beach, read a book & catch a tan, my idea of a beach holiday.

Things to do in Bali

First & foremost, enjoy your resort! Plan your days & set time aside to make the most of the complimentary facilities they offer, spend time in the pools & on the beach, it’s basically what you paid for!

dsc00755Day trip sightseeing Bali

Ubud day trip to traditional villages and temples (we skipped all the temple sites). We got to explore the batik, silverwork, and woodcarvings of Batubulan. We had lunch with the views of Mt. Batur, learned about luwak coffee, Bali teas, spices, herbs and Balinese rice terraces. And experience Ubud’s Monkey Forest, Art Market, and Ubud Palace.

Nusa Dua Watersports Beach

Jet Ski, Fly board, Parasailing, Fly-fish or Banana boat & a boat ride to the turtle Island (when they see tourist their price triples, bargaining is a must).

Spas

A full body Balinese massages on the beach at really low prices for 60 minutes or 90 minutes.

Elephant ride   dsc01796

For me sitting on an elephant will be a memory & an experience I will cherish forever, epic fun.

White Water Rafting

For those adrenaline junkies, rafting speedily down the rushing Ayung River, is a must do in Bali! With a team & an adventure guide, you paddle through hidden waterfalls & after the exhilarating journey of your life, cool down by jumping in the refreshing waters surrounded by the jungle.

Waterbom Bali

A waterpark with exhilarating twist & turn slides on tubes like Pipeline and Twin Racers before dropping into splash pools. Which is home to the longest water slide in the world & it just pimps up your heart rate, until your back to normal on the Lazy River. They also give you this convenient wristband when you enter for cashless transactions.

The Suite life-KL

Hello again from far away (I started typing this post while I was in KL)

The most key thing about traveling to any destination is having that little place of your own that you can call home. Basically a home away from home. However I wish it was a permanent home with regards to the no responsibilities, no chores & definitely no cleaning up the place…I could get used to this life, lol. A vacation is the time for pampering, pleasure & where hotel staff are only fixated on serving you & your utmost happiness. Being a guest in a hotel is every child’s escape, every man’s investment & of course every house wife’s dream.

With Hilton Honours you get to achieve all of this & get treated like some celebrity, which I must say was ultra freaking awesome during our stay in any Hilton Hotel.

Hilton Doubletree Kuala Lumpur

The Suite

As a Diamond Honours member, we were fortunate enough to be upgraded in every hotel into…Suites! Making our vacay to the Far East a fantastic trip! KL was where it all began. The space in this room was incredible, with a stunning view of the rest of KL. Staying for 5 days in this suite, was an absolute breeze, even thou we were hardly there…There is just something about a spacious room that after an actioned packed day in the city & lots of shopping, you can just drop down your shopping bags wherever you like & just chill.

The Makan Kitchen Breakfast Lounge

The Makan Kitchen Breakfast lounge had a huge spread of 6 different kitchens cuisines that all make up Malaysian cuisine. So there are 6 sections e.g. The Chinese section with a Chinese deco themed dining room & all Chinese foods that you can think off were prepared there. Same for the Indian kitchen & all the other 4 cuisines, you get my point! All these kitchens had their own chefs in open air live before our eyes preparing whatever we requested. The kitchen served breakfast at 6:30am until 10:30am, it would get crowded towards 9am. The staff were friendly & speedily attentive to our request. My fav thing, every morning was at the Indian kitchen, there was this chef that made these fresh hot naans that was rolled out super thin & than pan seared, OMG! They tasted amazing in the morning.

Hotel Facilities

The gym was medium sized & had enough treadmills, which faced the out side pool area & if you look up, you see the Patronas Towers. Way cool view dude! But an even more rewarding walk with the same view, is a quick walk from the hotel to the towers itself & that literally was a 15 minutes walk.

dsc00320dsc00329

Overall, a great hotel, good service from the staff & situated in prime location near the Patronas Towers, but if your purpose in KL is shopping than I suggest you book closer to Bukit Bintang Road by the shopping hot spots.

Plum Ice-Cream

Hi peeps, hope you all are well.

The look on people’s faces when I tell them I am making, “Plum ice-cream” is absolutely hilarious & they confusedly ask me, “Plum…like real plums?”

At that moment I think to myself & want to reply, “No the fake ones they sell at the market!”  LOL, but I hold back with that statement, bwhahaha (evil laugh).

One of my speciality & favourite ice-cream recipes of all times is plum. Its got a mind blowing taste of sweet-sour flavours. As I love to make it for those special summer occasions, plus it feeds a huge crowd. Since the occasion this past weekend was a bbq dinner, the night before my cousin in law ties the knot. It really was the ideal dessert & received much praise. My better half is not really a fan of plums, but the minute he tasted it, he kept returning to indulge in (just) a few more servings & said to me, “Ooof this is so good!”  & his eldest niece Nihaal added, “It looks to good to eat!” YAY!

Plum Ice Cream

Ingredients:

5 medium blood plums

1 can evaporated milk

4 egg yolks

125gr castor sugar

125gr icing sugar

1 vanilla bean/1 tablespoon vanilla essense

300ml water

Method:

  1. De-pit the plums & cut into quarters, place them with the castor sugar & water in a pot & boil for 10 minutes.
  2. Cool down, puree the plums with the liquid in a blender & chill in the refrigerator.
  3. In a sauce pan add the evaporated milk, vanilla & icing sugar, bring it to a boil & cool down, add a little milk to the lightly beaten egg yolks & whisk quickly to prevent the eggs from scrambling.
  4. Add the egg yolks to the milk & cook on low heat whisking all the time until a thick custard like consistency is reach.
  5. Add the plum puree to the custard & cook a few minutes more until everything is mixed well & thickened.
  6. Cool down & freeze for 1 hour.
  7. Place the plum custard in the ice cream machine & churn it for 45 minutes to 1 hour.
  8. Place in a mould & freeze over night before serving.

I serve plum ice-cream with a cream cheese sauce, it really compliments it each other well. The spill of creamy cheesy sweetness is a WOW to go with it! However you can use any sauce to your liking.

Water Infusions

Hello people

So you know how we all about the most important meal of the day…Well what is the most important drink of the day??? You know that liquid that falls from the sky, another clue is that liquid that makes up 71% of the earth’s surface & last clue something God has created & did put it in a can for us to enjoy… Yip you guessed it! Our body needs about 4 glasses of “Water” just to start the day & a total of 8 glasses for the entire day to survive.

Some say, “We have so many alternative drinks out there, why water?”.  Because of this, people genuinely struggle to drink water, , but I’ll be honest, myself included! I tend to be a lazy water drinker, I literally have to put a water reminder alarm on & I am not the only one. So I found a creative motivation to drinking water, I added natural flavours to water… With the use of herbs, fruits & spices …Nothing fancy just whatever you have available at home.

All you do is take a water infuser bottle, or water dispenser, or even a simple jug of water & add flavouring to it. Some ideas you can use:

  • Add a few slice of citrus lemon, slices of cumber & mint leaves, add water & leave it to infuse about 1-2 hours & trust me, it is so refreshing it actually shakes me up in the morning.
  • Another one that’s tasty is couple of strawberries, slice them up, add a few lime slices & basil leaves & leave that to infuse in the water.
  • Some of those who are adventurous this one’s for u… Add to your water apple slices & a few cinnamon sticks & leave that to infuse.
  • A spicy sweet one is a few peach slices & finely chopped ginger in your infuser.

And believe you me, this is a great way to encourage lazy water drinkers to make the most of the blessing from Our Creator & really the options of flavours are endless…

Infused Water

Infused Water

For those caffeine drinkers in the morning black tea, black coffee, fruit based teas even, herbal teas have a huge number of benefits & can also be used as a water intake replacement.

There are so many out there to choose from, but just to mention a few:

Lemongrass Tea settles the tummy after a meal, calms the nervous system, reduces anxiety, so if you know you up for a pretty crazy day…than go for this one!

Also Green Tea improves the brain functionality, maintains a healthy weight & protects the body from diseases. Why else do you think Chinese people live until such old ages & rarely have any bad health issues, wise guys 😉

And lastly the awesome fruit smoothies !!! Most people misunderstand “Smooooooooothies” & load them with stuff, but its pretty simple. Just add a few fruits, low fat yoghurt & water, blend it together & that will do the trick.

Bon Appetit!

The Dynamic City KL

Hey guys

Apologies for the rather late post, I tried to get down to it but I literally did not get any moment to have a sit down & blog.

It’s been an extraordinary, jet setting journey thus far! You know that feeling when, you having fun, time flies! OMG! I wish I could make time stand still…Even for just a little bit.

Malaysia’s Kuala Lumpur is the capital city that makes me fall in love with it over & over again. This vibrant city filled with, hustle bustle & of course fashion paradise is an adventure of a lifetime. The availability of halal food is the cherry on the top & really makes things so much easier when traveling away from home.

Since my significant other & I have both been to KL before, we planned an extra outgoing itinerary. Which I have to say was an exciting fulfilled 5 days & a total way to really explore the beautiful KL.

Weather forecast: Although the forecast always predicts rain & a lot of it, be sure to carry your umbrella with. However, we were really fortunate to only experience rain twice, so not disrupting any of our plans scheduled. Tip: no one can really predict KL weather.

Transport to hotel: Best way to move around from & to the airport is request an über which is far cheaper compared to the local taxis.

Transport in the city: Use the metro train, its super quick to move around from place to place & really easy to operate, even for foreigners.

Hotel: The first time I stayed in the Westin which is at prime location in the heart of KL’s Bukit Bintang opposite the Pavillion Mall, definitely recommend it if shopping is your thing.

This time we booked at the Hilton Double Tree in KL, it’s exactly the opposite side of the city to the Westin but nice thing is, it’s close to the Patronas Towers & takes about a 15 minute walk to KLCC. Being a diamond member with Hilton Honours we got upgraded to a suite a real spacious pleasure to live for 5days. My next post will be about all the hotels we booked in, all the upgrades & services that go with it.

Things to do in Kuala Lumpur:

1. Red hop on hop off bus: Ride around the entire city takes you throughHop on hop off bus all the Main touristic spites, especially for those first timers in KL.

Patronas Towers

Patronas Towers

2. Patronas Towers: a.k.a KLCC, are twin skyscrapers in Kuala Lumpur, Malaysia. The towers are a must to do especially book to see the viewing deck of the whole city from above. Go a hour before sunset so you experience the city at day time & get to see the stunning night lights of the city. It’s better to book the tickets online it’s slightly cheaper, but good to avoid those long queues. 20170131_201306Just outside the KLCC is a magical, musical, fountain with lights every half hour, however at night to watch is even more beautiful. The food court also has a wide variety of different cuisines inside the mall as well as by the waterfront. If you looking for an upmarket place than I recommend Harrods store that serves breakfast & high tea.

3.  Bukit Bintang:20170201_205140 is the name of a road for shopping paradise, this is thee place you will return back to your hotel with a pile load of shopping bags in your hands, I promise! It’s a long never ending road of all your favourite brand stores, from Sephora, Charles & Kieth, Zara, H&M…at ridiculous low prices & further more having sales on almost everything. Makes that adrenaline rush flow through your veins. This road has many other malls nearby it that is a must to go for shopping malls Pavillion Mall, Times Square Mall, Fahrenheit Mall, Low Yat Mall (electronics).

4. China Town: for cheap, fake things a place to bargain.

20170202_145735

China Town

5. Sunway Lagoon: A fun water theme, amusement park, simply fun for the whole family. The best in Malaysia & its just 30minutes outside of KL. If you have time it’s really worth going & best to book online in advance especially for a Thursday package, as they have a buy 1 get 1 free offer.

Food: (To name a few must eats)

1. Tapak:
20170131_211754An urban street dining food truck park! I know right! How freaking terrific! So up my alley…A food park filled with over 20 something really good looking food trucks, with Chefs that make & sell they very own20170202_212242 specialities from meals, to drinks, to desserts, a kingdom of gourmet foods. It’s the future of food with outdoor deco of lights bulbs hanging as the roof, rustic wooden furniture for people to indulge in their meals & just socialize until late hours of the night. It’s all about what’s new & good food. It was so good that we went back for a few times after that.

20170202_1550192. Aunty Anne’s Pretzels:20170202_160745 A tiny store that’s in most malls around KL, you won’t miss it, as people are queuing up for freshly baked sweet or savoury
stuffed pretzels.

3. Tarboosh on Bintang road & another smaller branch in the fancy, top class food court of the Pavillion Mall. Turkish food with spices & a burst of fresh flavours that compliment any meat, a hint of garlic with a salad mix & a chili yoghurt dip. OMG! Mouth-watering for the next bite!

Airport Lounges

Hi everyone, all the way from Hong Kong.

I still cannot believe I am on holiday…Reason being, it was pretty over due, feels like a dream, again! I think it only hit me when I arrived in Hong Kong. So just a little bit of a recap on our Far East vacation trip thus far…Yesterday after my better half & I checked in our luggage & recieved our boarding passes, we headed towards the SAA Platinum Lounge at OR Tambo International Airport, Johannesburg, South Africa.

A quiet escape in airports that is there for us to just chill out, relax & devour in a wide selection of food items along with, all you can drink beverages. Indeed, making the most of it & refreshing ourselves before the long, 13 hour flight to Hong Kong. I really advise people to make use of these travel lounges in airports, it just makes you unwind & the wait in Airports, such fun!

Plus you have free unlimited wifi access & my highlight, the private showers! Like your very own bathroom in the airport, it’s fantastic. They also supply you with fresh towels & hygienically it’s incredible, especially  if public toilets, are not your thing.

Once our flight landed on Hong Kong soil,  we have an eight hour wait in transit. Which is an ultimate breeze, as we currently enjoying the facilities of the United First Class  Lounge in Hong Kong airport. We ate from a wide variety of complimentary foods  from the buffet. Later on we hit the showers to get our bodies rebooted, we actually got pampered with the first class service. After that long flight all you want to do is get scrubbed. We were provided with tooth brushes, toothpaste, 1 hand towel, 1 bath towel & shower gel, lotions, soaps, ear buds…The works!

I must say, it was really such fun & adventurous times at the airports.

As I promised the recipe I chatted about on Radio Islam’s Weekly talk show. For those of you who missed it just to fill you in on what went down in the studio’s. We discussed breakfast as the most important meal of the day & all tasty treats in the morning.

Well I’m sure you’ve heard that phrase eat “Breakfast like a King, Lunch like a Prince and Dine like a Pauper” , but do we actually follow it?

The thing is due to our day’s agendas our morning time is rushed & some of us are even guilty of skipping breakfast. In actual fact we shouldn’t skip breakfast, even if its breakfast on the go or at work. Breakfast provides the body and brain with fuel after an overnights fast! It’s almost like iftaar & without breakfast you are basically driving a car with no petrol! That’s actually where the name originates from break-fast.

We spoke about two recipes. “The DAYCA” was the first recipe, a bit of sweet & a bit of savoury item “The Egg in the nest”.

Our focus on having all the elements of the food pyramid to balance out a meal is some times a worry, but this next dish is entirely all your wishes come true. A reminiscing dish from my childhood, a trip down memory lane, I call it “Egg in a nest” ,because it looks exactly like an egg in the nest!

What I really like about it, it’s a one dish meal and that makes things so much easier & quick to indulge in the morning for the whole family. In a single muffin cup you have a brown and crispy hash brown crust that is filled with sautéed vegetables & a bit juicy meat topped melted cheese, and a perfectly cooked sunny side up egg.

It’s really awesome & has all the elements that your body needs to kick start the day…You can also serve it as a brunch dish, enjoyed with a tossed green salad but for breakfast with a bread toast on the side. You good to go for the day.

Egg in the nest

Prep time: 30mins

Serves 6

NB: I doubled it, it can be altered halved or doubled, use it as a guideline, but you can definitely use it as a guideline.

Ingredients:

450gr grated potatoes

6 eggs

2 egg whites

2Tablespoon melted butter

2 Tablespoons olive oil

1/2 cup onions/red onions/spring onions/chives

1/4 cup capsicums red/yellow pepper

1 cup meat in cubes either sausages/polony

1 cup baby spinach u can also use mushrooms/zucchini

salt

pepper

paprika/cayenne pepper

spices

Method:

  1. Preheat your oven to 230 degrees C.
  2. Use a non-stick jumbo muffin pan of 6 cups.  Or ramekins if u have, butter the inside it makes the hash brown crispy & browns.
  3. Season the grated potatoes with salt and pepper, paprika or chilli flakes for heat.
  4. In another bowl lightly whisk 2 egg whites. Add the egg whites to the hash browns, along with melted butter, and toss them all together to combine.
  5. Than evenly divide the mixture among the muffin cups measure ½ cup mixture and firmly press onto the bottom and up the sides of each cup. Bake in your oven for about 15 minutes, or until nicely browned.
  6. Meanwhile prepare your veggies In a medium sized pan add olive oil. Sauté half cup onions and quarter cup capsicums, on medium high heat, sauté until softened. Season with salt and pepper or spices to your liking.
  7. Add 1 cup meat in cubes either sausages/polony and cook.
  8. Then add 1 cup veggies until the spinach has wiltered.
  9. Evenly divide the mixture among the baked hash brown cups press down with the back of the spoon.
  10. To top that, sprinkle a couple of tablespoons of grated cheese just to cover the veggies & Place back into the oven for about 2-3 minutes or just so the cheese melts.
  11. After that cheese has melted remove it from the oven & crack one egg into each cup.& back in the oven for the last time, Bake until the whites are set and if u prefer runny yolks (about 8-10 minutes) if u want it well done bake for about 12 min depending on your oven. Remove from oven. Let them cool for a few minutes, remove each egg in the nest from the muffin pan & Serve right away

I like to add a little extra crunch for the side, 2 slices rye bread toasted topped with ½ medium tomato sliced up, 20gr feta cheese & basil leaves on top.

And that goes down as your morning most important meal of the day, but not to forget the most important drink of the day & that is water!

Our body needs about 4 glasses of water just to start the day. We also chatted about how lazy water drinkers can make use of this blessing from our Creator & if u all about taste than infuse water, with so much endless options of flavours: spices, herbs & fruits. Which I will definitely show in another post.

Bon Appetit!
